Sloppy Joe Pizza A Leftover Fusion

Spaghetti Sauce Pizza Rolls
Into the oven it goes for about 22 minutes 
@ 425 degrees.

I created these out of a need to use up the leftover Spaghetti Sauce I made a few days ago. It was a delicious, flavorful meat sauce. Ground beef and ground pork, onions, Italian seasoning, and garlic all went into making this homemade sauce. I needed to use up the leftover sauce! I had shredded cheese and shredded mozzarella in the deli drawer of my fridge so I thought I would use that as well. Also a bit of pepperoni from a previous pizza night was also on hand. I sliced up some onion because I happen to love onion on pizza. 

I’m actually serving this for brunch today. A hearty brunch before we all scatter to do whatever it is that we do today… 

These are store bought bolillo rolls. My first choice would have been a big French Bread loaf. My store was out of them this am. I opted for these rolls as a second choice option. 
Fresh out of the oven and ready to eat! 

This is a good way to use up spaghetti sauce and repurpose it into a different meal. I hate to waste food and this pizza is amazing! 

Amelia and I have decided it is an absolutely delicious cross between Pizza and a Sloppy Joe. A fusion of sorts!

Puppy Love I’m Smitten And Bitten A Lot

My search is over. I decided a month ago that I’d really like to adopt a dog. The kids have been wanting a dog for a very long time. We have a dog who is an amazing older dog. Coco is about 12 now and we adore her! In her best day, she wasn’t one to enjoy long walks. She is a Shitzu-Dachshund mix and her legs are so short. She has to work very hard to keep up. She only really enjoys hugs, she doesn’t play. The sweetest dog ever. I have never had a better dog than this girl. 

I decided that to add another dog to my household, would be a terrific family project. We are all home and can share puppy duty. Also, I wanted to chose a breed of dog that would enjoy long walks and hikes. Playing fetch and maybe even a companion to kayak with. After researching breeds of dogs, I narrowed my preference to a Border Collie. Long story short, after weeks of looking, I found my new puppy friend, Luna. Meet Luna!

Needless to say she is also very sweet, and we already have fallen in love with her. Luna is going to be a priceless treasure to me❤️. I can’t wait to play fetch and frisbee with her! I think it interesting that as little as she is, she has the herding instinct. The first time that I walked across the yard with her, she weaved in and out around me. What an amazing pup she is! Also, at 8 weeks old, she picked up her small food bowl and brought it to me! Sooo adorable. She is going to be smart and so energetic! I hope that I can keep up. 

Fortunately Luna has given up trying to play with Coco. She realizes that you can’t teach an old dog new tricks…

New Cases Are Skyrocketing Here In Arizona

This song takes on new meaning during the pandemic. When I revisited this cover, it was Moms birthday and I was really missing her. For whatever reason, this has become the song that reminds me of her. Many tears have been shed while listening to this original! You never get over losing a parent. Even when you yourself age. I think she would like that I’m still doing my thing here. She was my biggest fan. She liked my music!

Many feelings and thoughts have come and gone during this period of reflection. Some very frustrated thoughts as well as gratitude for my life. Self discovery, coupled with long periods of Silent Lucidity…

Since we can walk outside, I have chosen to do that, often. I walk half and run the other. It really is a terrific outlet for stress and peace of mind. Me time is what I have been missing since everyone has been home underfoot for months now. Alone time is precious!

I always feel better when I revisit this cover…

The pandemic is hitting us so hard here in Arizona. I live in Maricopa County where the most new cases are occurring. This picture is of a screen shot of the new cases as of the day before.

I have pretty much been on Lockdown as I haven’t been going anywhere. I did however venture out yesterday for groceries. It’s beginning to feel as if it’s a matter of when, rather than if you catch the virus here. I really don’t want Covid-19! I’m annoyed by the very threat that it is! I wrote a very angry post that I later took down last week. Not in my character to write angry posts but  in my defense fear,  got the better of me. 

I feel rather trapped like a rat at times, within my county! I was looking at and for, causation, accountability and maybe closure?  We aren’t going to get any of that I’m pretty sure... certainly no closure until we eradicate and stomp out Coronavirus. Until then, I’m in CoronaZona trying hard to keep my family safe and virus free.
