Meatless Weeknight Meal Shallot Onion Mac & Cheese

Meatless Wednesday. I enjoy making this for the kids. They seem to love homemade Mac&Cheese. This paired with a tossed salad seems like a good weeknight meal.
Easy recipe…
To your favorite béchamel recipe, add a 1-1/2 cup of finely chopped sautéed shallot and sweet yellow onion. Stir well to incorporate. Add 2-1/2 cups of your favorite cheese. Stir well. Add 1lb. of cooked macaroni noodles. Fold well and pour into a 3 quart baking dish. Cover the top with sliced cheese. Crush a small bag of your favorite chips and sprinkle generously on top. Bake in a 350 degree oven for about 35 min.
*Let it rest for about 20 min. before serving*

I made a semi-homemade Cherry 🍒 Pie. I bought the roll out type of packaged pie crust. Two cans of cherry pie filling. A top crust, some egg-wash, and a little coarse Sugar In The Raw for flavor and texture. Looks like a winner dinner I hope!
I’m no chef but I am a weekday home cook with years of cooking and baking experience. I try to keep it interesting to please the kids. Luckily for me, they aren’t picky and they don’t have food sensitivities!
