I cheated a bit here by buying a box of Puff Pastry Dough…One box made 12 generous pastries!
*Washed & dried my fruit- added 3 tablespoons sugar and 1 teaspoon of corn starch to the fruit. I chose raspberries, blue and black berries. Fold well. Let this rest while you prepared the cream cheese filling and thaw the puff pastry dough.
I thawed the puff pastry dough on a piece of waxed paper, on my countertop. The puff pastry comes with two sheets.

*Let thaw then cut each sheet into thirds and then in half. I used a pizza cutter to cut my dough.This will make 12 pastries.
*Score a box shape in each pastry leaving 1/4 inch all the way around. See photo below. ⬇️
*Roll out each piece of dough just slightly.
*Cream Cheese Filling-
One regular sized block of softened packaged cream cheese. Zest of one lemon and 2-3 teaspoons of squeezed lemon juice. 3 tablespoons of granulated sugar and a teaspoon of vanilla. Cream together until soft and spreadable.
*Spread the cream cheese within the box you have scored leaving the border edge clean. Use a generous amount of filling. Arrange your fruit mixture on top of the filling.

*Melt 1/2 stick of butter and brush it on the border edge of the box you created. Brush all the edges with melted butter.
*Sprinkle coarse raw sugar along the buttered edges and a little bit more on top of the fruit.
*Bake in 400 degree oven for about 25 minutes. The pastries should look golden brown and flaky.
*Cool for about 20 minutes before dusting each pastry with powdered sugar and adding a mint leaf (optional).

ps. You can pick a fruit you like. I’d like to try this with thinly sliced 🍑 peaches. Next time, I will! These turned out so nicely I can’t wait to make them for my next get together!
